Week #1

It’s the first week of 2022 Veggie CSA! We are so excited to share with you: head lettuce, chives, radishes, arugula, salad mix and kohlrabi.

The first few weeks of our CSA tend to be very greens heavy as we are so dependent on the weather and this season has been particularly unpredictable. Let’s hope for some warmer temps with a nice mixing in of rain to get our heat-loving plants just what they need to get growing. Typically, we plant the first round of vegetables in one of our High Tunnels in order to provide full-size beautiful heads of lettuce and kohlrabi right off the bat.

There are many great salad options with these week’s share, but some other interesting ideas here as well.

The true farm to table line up, these radishes are the first of many root crops to fill your box. For the best storage results, we recommend topping the radishes and keeping them in a plastic bag in your refrigerator. If you forget to cut the greens off and the roots get wobbly or soft, you can revitalize them by placing them in a bowl of water in your refrigerator and they will rehydrate.

A lot of people see this vegetable and scratch their heads. Kohlrabi! If it’s new to you, we have lots to share. If it’s not new to you, then yay! Kohlrabi is delicious raw and cooked. We love to add it to salads and slaws, sautés and soups. The leaves cook up like kale and are pretty much interchangeable in any recipe for that.

Chives are beautiful, aromatic, and tasty. It is a versatile herb that can be used in almost any savory dish. We recommend putting your bunch in a glass of water, just like a bouquet, to keep it fresh. You can trim the bottom and change the water regularly to keep it fresh longer. It’s an awesome herb to mix into butter, cream cheese, or garnish a dish. If you’re feeling creative, check out this chive pesto recipe - and let us know how you like it!
